BBM's

AS returned from the UK a month ago, hence this long gap. She's really glad to be back home after 9 months … the longest she's been away from home. We've been catching up on a lot of stuff and generally enjoying the bliss of her being home ... She has started applying for jobs but in the meantime wondering what to do with herself. Since she did some cooking for herself in London all these months, she's developed an interest in various types of 'khana' and been helping me with the cooking at home. She tried some baking recently and here's the result:











Recipe:

1 egg

2 cups flour (maida)

1 cup milk

¼ cup sugar

¼ cup vegetable oil

3 tsp baking powder

1 tsp salt

1 cup fresh blueberries

Pre-heat oven to 200C. Grease bottoms only of 12 muffin cups. Beat one egg; stir in 1 cup milk and ¼ cup vegetable oil. Mix 2 cups flour (maida), ¼ cup sugar, 3 teaspoons baking powder and 1 teaspoon salt just until the flour is moistened (batter will be slightly lumpy). Fold in one cup of fresh blue berries. Fill muffin cups 2/3 full. Bake for 20 minutes. Immediately remove from pan. 1 dozen muffins ready!!!!!

Don’t go by the title ... I am not referring to the Blackberry phone and how youngsters these days are glued to their BBs ... be it at the dinner-table or a movie theatre. It is quite annoying. You can be talking to them but their fingers are constantly typing away in BBM mode. Anyway, more addictive are these blueberry muffins which AS called BBMs (Blueberry muffins)!

They are delicious, not very fatty and go with anything you fancy tea or coffee at any time.
